Basic Chicken Salad
Ingredients
1 lb. Roasted Chicken. I use the chicken from Sam’s Club, or Kroger’s
1/2 Sweet Onion minced
1/3 cup celery, minced
3 tsp. parsley, chopped
2 Tbsp. lemon juice
1/2 cup mayonnaise – add more to suit yourself
1 Tbsp. Dijon Mustard
1/4 cup Almonds minced
1/2 cup dried Cranberries
1/4 cup Pecan Chips
12 large grapes cut in half, green, black, red, or pink your choice
1/2 green apple, peeled and cut into small pieces
1/4 cup golden raisins
2 Tbsp. Cilantro, minced
Cooking Instructions
Mix all of the ingredients together in a bowl.
