Gluten & Dairy Free Corn Bread 2
Ingredients
1 1/4 Cup Gluten Free Flour (I use Measure For Measure Gluten-Free Flour)
3/4 Cup Yellow Cornmeal
1/4 Cup Plus 2 tablespoons Sugar. (I use 5/16 Teaspoons of Stevia.)
1 Tablespoon baking powder.
1 teaspoon salt.
2 tablespoons honey
3/4 Cup Dairy free milt. (I use Lactaid Whole Milk)
1/2 cup (1 stick) Butter, melted and cooled.
Instructions
1: Preheat the oven to 350 degree. Spray a cast-iron frying pay with non-stick cooking spray.
2: In a medium bowl, break up the eggs with a whisk. Whisk in the honey, and then the milk, Set aside.
3: IN a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add the milk mixture and the melted butter to the dry ingredients. Whisk until just blended. Do not overmix, it is okay if there are a few lumps. Pour the batter into the prepared frying pan. Bake for 25 to 30 minutes.
Here’s the Honey Butter Recipe:
1/4 pound BUTTER
1/4 cup strained bacon drippings
2/3 cup honey
4 slices bacon, cooked crisp and crumbled
Beat butter until light and creamy. Add drippings and bacon. Take equal
amount of honey (approx. 2/3 cup) and beat into butter mixture until light
and fluffy
